This dish is neither a taco nor a pie, but rather a delicious reinvention of both terms! We’ve used butternut squash to create a layered baked casserole that’s full of peppers, onions, zucchini, mushrooms, and housemade chicken chorizo made from Cook’s Venture’s pasture-raised heirloom chicken. This is then all coated in our fresh enchilada sauce and topped with broccoli and toasted pumpkin seeds.
