This salad might sound simple, but really it’s full of fun and complex flavors! To start, we mix together spinach, romaine, and cabbage for the salad base. We then top it with our pasture-raised chicken breast from Cook’s Venture which has been marinated in Mexicali spices before being expertly grilled. Then we add more delicious toppings in the form of red onions, carrots, black olives, radishes, tomatoes, crispy shallots, and toasted pepitas! Finally, we serve it up with a side of our Avocado Vinaigrette which is the perfect creamy and cooling dressing for this exciting salad.
