Everyone’s favorite magic Italian rice gets a Whole30 spin! Our risotto starts with a base of cauliflower rice which is then coated in a creamy cashew sauce to create that luxurious risotto texture. We then top it with our grilled pasture-raised chicken breast from Cook’s Venture, mixed mushrooms, and roasted mighty vine cherry tomatoes. To garnish, we sprinkle it all with our almond-based parmesan “cheese”.
Herbed Mushroom Risotto
Microwave: Remove film from tray. Microwave on high for 1 minute. Stir, then heat for 30-second intervals until hot.
Oven: Preheat oven to 350 degrees. Remove film from tray. Heat for 7-10 minutes. To ensure even heating, rotate and stir the contents of your meal halfway through the process.
