These aren’t your average meatballs! For this dish, we’ve used pastured ground turkey from Ferndale Farms as the base for our meatballs. We then season them with lemongrass, ginger, curry spices, fish sauce and garlic which adds a ton of Thai-inspired flavor. We then place these atop a bed of spiralized sweet potato, spinach, onion and red bell peppers. Finally, it all gets paired with a side of our cilantro dressing.
