Rich and flavorful, this dish begins with our pasture-raised chicken thighs from Cook’s Venture which have been dry-rubbed with our own Cajun spice mix and slow-roasted until perfectly tender. This is then served alongside a sauteed vegetable and cauliflower rice medley. Finally, we couldn’t call this Oaxacan Chicken if we didn’t pair it all with sides of pico de gallo and our housemade mole!
